Elote is the Spanish word for ‘corn cob’ and Mexican Elote is a delectable street food dish of grilled corn on the cob slathered in a mayo cream sauce, garnished with chili powder, cheese, and lime. In a word: heaven. I actually don’t think it’s possible to improve upon this classic, BUT I have spun this dish into a dinner-worthy meal. Knock out the cobs (but keep the cobs to make nom-nom corn broth to cook your noodles in), add pasta, a little bit of jalapeño and shishito, and WA-BAM (you’re welcome): dinner is served.
